I do understand this within the context of doing it in one game. But multiple games of different genre variations I don't think is automatically a bad thing. You said yourself Nintendo do it, so why not Ubi?

Because Nintendo's will tend to be 2D entries and 3D entries in franchises that started out in an era when 2D was the norm and they then changed as the medium did. They keep both going because they are at their very core different experiences of the same franchise. Old AC gameplay isn't different enough from later AC gameplay for them to have a need to coexist, yet alone to warrant a third addition all at once.
